"The Saussilles" is a parcel of Pommard 1er Cru with soil of clay and limestone, which is also quite stony. The vineyard, planted in the year 1930, is the oldest parcel of the field. The yield is only 25 hl/ha. The grapes of this region are hand harvested a little latter at full maturity. The maceration is 18 days, with punching down or pumping over 2 or 3 times in the early days of fermentation. Aged in Oak barrels with 20% new barrels. 16 months on the lees and a racking after one year allow a bottling without fining or filtration.
