The wine is obtained exclusively from Pinot Grigio grapes, a varietal of French origin, cultivated in hilly areas, in soil which is of average marl composition. The bunches are small with round grapes red – grey in colour, and like Pinot Bianco it derives from a mutation of Pinot Nero. The grapes are hand picked, pressed in a soft press after which there follows a brief period of decantation in total absence of sulphur dioxide. The fermentation takes place in stainless steel tanks under a controlled temperature. The ageing takes place on the lees for 8 months. Golden-yellow colourmondo-02The aroma is fresh and inviting, with notes of banana and passion fruit.mondo-03Savory on the palate, as terroir, with an intriguing freshness that gives drinkability and complexity. Very persistent and consistent taste to the nose.

Producer
The Schiopetto family has been in the wine business for three generations. Mario Schiopetto founded this legendary estate in 1965, producing wines that would eventually inspire the entire wine industry. Since his death, his children Maria, Angela, Carlo and Giorgio have demonstrated their commitment to running the family winery. The Schiopetto family’s 75 acres of vineyards cover the estate surrounding the former residence of the Bishop of Gorizia in Capriva del Friuli, and the Podere dei Blumeri in the Rosazzo hills that form part of the eastern hills of Friuli. Since the beginning Schiopetto has set a standard of unrelenting quality that covers vineyard practice as well as vinification. The vines are planted in a unique soil type known locally as Ponca, which lends tremendous crushed-mineral clarity to the wines. The heart of the winery is the yeast room, which plays a vital role in the company’s philosophy and production process. This is where the various types of yeast required to trigger fermentation are grown. Cutting edge technology is used to eliminate the risk of error and carry out the art of winemaking. Schiopetto is one of Italy’s foremost white wine producers. It was selected by Wine & Spirits Magazine as Top 100 Winery of the Year in 2006, 2007 and 2009.
