Didier, Pascal, and Marilyn Picq carry on their father Gilbert's tradition of making a wonderfully classic expression of Chablis in the rolling hills of the of the Yonne Valley. Since 2006 the Picqs have used only 100% natural yeasts, which along with very low yields and aging in stainless steel produces wines of great depth and intensity of flavor. The village level Chablis 2014 we are offering here is every bit the equal of other producers' Premier Cru offerings.
It is a classic expression of Chablis with its finely knit texture, flinty quartz like minerality and racy acidity that keeps it detailed and lively in the glass. Green apples and crisp pear flavors mingle with hints of wet stones and exotic spices with razor like precision and perfect balance on the finish.
